Keto Chicken Salad
A perfect summer lunch: fresh, delicious and energizing. You can also vary the recipe every week: adding bacon, avocado, sliced tomatoes or substituting the mayo for Keto ranch dressing. You can never run out of options with this one!
- 2 ribs celery
- ½ tsp pink Himalayan
- 1 tsp fresh dill
- ½ cup pecans
- 1 lb. chicken breast
- ½ cup mayo
- 1 tsp mustard
- Preheat oven to 425 F and bake chicken breast for 15-20 minutes
- Remove chicken and cut into small pieces
- In a bowl mix all ingredients and toss until chicken is fully coated
- When ready, add dill and serve
